    Dark Chocolate Matcha Truffles

1 cup almonds
1 cup pitted dates tightly packed
1 tsp matcha
pinch of salt
dark chocolate topping (or baking cocoa, flaxseed, or shredded coconut)

Add almonds to a high speed blender and process until mealy. Remove almond meal and put dates into processor. Pulse until they form a well-blended ball. Add the almond meal, then matcha, then the salt and pulse until it’s all well incorporated. Form them into small balls by scooping a spoonful of mixture and rolling between your hands. Then add the topping and refrigerate for at least two hours before serving.

I’ve also substituted cashews and walnuts for the almonds, and raisins for the dates. All are delicious!

Yields about 2-4 dessert servings.
